As an epic, it is traditional to eat at the galette des Rois. The “real” galette is Frangipane, it’s a mixture of almond cream and pastry. Over the years, variations have appeared, such as apple or chocolate hippette. But nothing beats the original recipe, you still have to love almonds! I need :

  • 2 puff pastry
  • 150 g ground almonds
  • 60 g of soft butter
  • 125 g of sugar
  • 2 eggs
  • 1 bar of vanilla
  • 2 tbsp. rum
  • 1 egg galette brown
  • 1 pinch of salt
  • 50 g of pastry cream for making “real” francipan (optional)


1) Preheat the oven to 180 degrees

2) Start by whipping the sugar and soft butter together.

3) When the preparation is homogeneous, add almond powder.

4) Cut the vanilla bis in half, scrape the seeds with the tip of a knife and add them to the preparation.

5) Add 2 whole eggs and rum or other of your choice (orange blossom, bitter almond, etc.)

6) If you want to make a francipanen, add the dough cream and mix everything.

7) Put almond cream on one puff pastry, leaving 2 cm of dough around it, which you moisten slightly with a brush and water (or your finger).

8) Place the bean, press it lightly into the cream and cover with another plate of dough that you have stretched so that it is slightly larger than the first. Press around to compress the edges.

9) Beat the gilded egg with a pinch of salt (very important for the composition of the egg). Then brown the surface of the galette with a brush.

10) Put the galette in the refrigerator for 30 minutes. When the time is up, draw the patterns with the knife blade without piercing the dough.

11) Brown the top of the galette a second time.

12) Bake the galette in an oven already preheated to 180 ° C for an average of 40 minutes. The cooking time can be extended if the galette is large or if the puff pastry is homemade.
